Pesto Glazed Tofu Bruschetta

"A twist on a classic tricolore bruschetta, the smokiness of the tofu compliments the creamy intense flavour of Barilla Vegan Pesto and sweetness of the cherry tomatoes. Try it with silken or semi firm tofu for a softer take.

|Barilla Vegan Pesto
|small baguette, cut into 1cm thick slices (about 16 slices)
|smoked tofu, cut into small cubes
|cherry tomatoes, quartered
|small basil leaves
|Freshly ground black pepper
Individuals with allergies or specific dietary concerns should verify that the ingredients they utilize for the recipes comply with their restrictions.
Heat the oven to 200°C, fan 180°C, gas mark 6.
Drizzle the baguette slices with the olive oil, season with salt and black pepper. Bake until golden brown on both sides.
Spread a little Vegan Pesto on each slice and top with the tofu and cherry tomatoes.
Drizzle the rest of the Barilla Vegan Pesto over the top.
Finish with the basil leaves and a little black pepper.
