Ingredients

320g (11,3 oz) Barilla® Spaghetti No. 5
250g (1 medium size) Eggplant
5 Egg yolks
5ml E.V.O.O
5g Sumac
To taste Black Pepper
to taste Salt

Method

Step 1

In a bowl, beat the egg yolks and season with salt and pepper to taste. Then, set the sauce aside for now.

Step 2

Cook spaghetti in a large pot of boiling salted water. Bring them "al dente." It’s very important to reserve some cooking water after having drained the spaghetti.

Step 3

Cut eggplant into 1 cm wide chunks, then deep fry them in extra virgin olive oil. Don’t stop until they’re golden! Pat them dry and set them aside.

Step 4

Carefully whisk spaghetti with the egg sauce and a bit of cooking water.

Step 5

2 minutes before serving, toss the fried eggplant with 5 g of Sumac.
