6 Oz Barilla® Ditalini (or small short pasta) ​
7 Oz white beans (dry)​
7 Oz Cannellini beans (dry)​
7 Oz Cranberry beans (dry)​
1 ½ tbs E.V.O.O.​
1 Onion, medium​
2 Medium carrots​
2 Stalks celery​
1 Sprig of thyme​
TIP Salt and pepper, to taste​

Method

Step 1

Soak all types of beans  -if used dry-  in cold water overnight​

The next day, clean and chop the onion, carrot and celery. Heat the oil in a saucepan, sauté the vegetables, thyme, the tomato pulp and bay leaves. Then add the drained beans, washed and dried.​

Step 3

Cover with the cold water and cook. Ten minutes before the beans are cooked (approx. after 50 minutes), season with salt and pepper and add the ditalini and let it cook according to package directions.​
