Serves 4

320 g Barilla® Rotini​
3 Tbs E.V.O.O​
20 Oz mixed mushrooms​
1 Tbs fresh parsley, chopped​
¼ Cup dry white wine​
1/2 Cup vegan cream substitute​
1 Clove garlic​
TIP Sea Salt and pepper to taste

Step 1

Scrub and slice the mushrooms.​

Sauté the whole garlic clove in a pan with the oil.​

Add the mushrooms and cook for about 5 minutes, making sure that the mushrooms remain firm.​

Step 4

Add the white wine and season with salt and pepper, and stir with the vegan cream substitute..​

Bring a pot of salted water to a boil and cook the pasta until al dente, drain Transfer to the pan with the mushrooms and mix well over medium heat for a few minutes.​ Sprinkle with chopped Parsley before serving.
