1 Box Barilla® Penne
1 Tbs E.V.O.O, divided​
1 Cup kale chopped​
2 Pints cherry tomatoes​
3 Slices of lemon, ½ inch thick​
8 Oz tofu extra firm, whole​
½ Cup vegan heavy cream substitute​
1 Tsp dry oregano ​
TIP Salt, Pepper to taste ​
TIP Chili flakes to taste​
TIP KALE CHIPS in the oven to be CRUMBLED ON TOP instead of crushed chili flakes .

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil..​

Step 2

Place kale, tomatoes, vegetal cream, lemon and oregano in a baking dish, season with salt, pepper and half E.V.O, place tofu right in the center. Bake in the oven for 20 minutes. ​

Step 3

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to tofu extra veggies mixture, and with the help of a spoon smash the cheese and stir.​

Fold in drained pasta, mix well, and drizzle with remaining extra virgin olive oil.​

Step 5

Top with crushed chili flakes  before serving or with kale chips if preferred : Wash, pat dry and devein kale leaves, sprinkle with salt, chili flakes and EVOO. Place flat in the oven at 200° C for a few minutes until crispy.​
