1 Box Barilla® Fettuccine ​
1 Skinless vegan Chicken breast, diced ​
4 Tbsp EVOO ​
½ Onion, diced ​
1 Garlic clove, minced ​
8 Oz mixed mushrooms, sliced​
2 Cups baby spinach ​
1 ½ cup vegan heavy cream substitute ​
1 Cup vegan Parmigiano cheese, grated ​
1 Tbsp nutmeg

Step 1

Bring cream to a simmer. Whisk in nutmeg, 3/4 cup of Parmigiano, sea salt, and black pepper. ​ Turn off heat and set aside.

Step 2

In a skillet over medium / high heat add 1 tbsp EVOO, chicken , salt and pepper.  Cook vegan chicken for 3-4 minutes or until browned and fully cooked, remove from the pan and set aside. ​

Add remaining oil to the same skillet with onion. Sauté for 1-2 minutes then add garlic. ​
