Ingredients

Serves 4

1 Box Barilla® Gluten Free Elbows

FOR THE SAUCE​

2 Cans cannellini beans , drained ​
1 Tsp powdered garlic​
1 -2/3 cup unsweetened vegan milk​
5 ml Lemon​
45 g Yeast flakes​
10 ml Apple cider vinegar​
10 g Turmeric​
5 g Gluten free Miso​
2 Pinches Salt​
TIP Pepper, to taste

FOR CRUNCHY BREADCRUMBS​

1 Tbs vegan butter or margarine​
2 Tbs gluten free panko​
1 Tbs white sesame seeds​
TIP Salt and black pepper, to taste

Method

Step 1

Bring a pot of water to a boil, add salt and pour pasta to cook it according to package directions. In the meantime, start preparing the sauce.​

Step 2

Wash the canned beans under the water, drain well.  Pour them in a blender together with powdered garlic, vegetal milk, lemon juice, yeast flakes, apple cider vinegar and miso.​

Step 3

Blend until obtaining a smooth and silky texture. Adjust with salt and pepper and mix again.​

Step 4

In a small pan toast the turmeric for 30 seconds and pour into it the creamy beans sauce, mixing well. Keep stirring until to obtain a shiny cheese like color.  ​

Step 5

In a large pan,  melt the vegetal butter on a medium heat,  then add gluten free Panko.​ Toast for a few minutes until golden then remove from the heat and put aside in a bowl.​ Once cold, mix with gomasio or with the crushed sesame seeds..​

Step 6

Once «al dente» drain pasta and pour in the  beans sauce . Cook for one minute more on  a low heat.​ Serve by sprinkling bread crumbs on top.​
