1 Box Barilla® Gluten Free Penne
4 Tbs E.V.O.O , divided​
2 Pints cherry tomatoes​
2 Zucchini medium size, ½ inch diced​
3 Slices of lemon, ½ cm thick​
8 Oz tofu extra firm, whole​
½ Cup vegan cream substitute​
1 Tsp oregano​
1 Garlic cloves​
¼ Cup pistachio, roughly chopped​
TIP Salt, Pepper to taste ​
TIP Substitute pistachio with a Gremolada topping sauce​
10 gr Parsley , 1 clove garlic, half lemon zest ​

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil..​

Step 2

Place tomatoes, garlic and zucchini  in a baking dish, season with salt, pepper and half E.V.O, place tofu right in the center. Bake in the oven for 20 minutes. Remove garlic clove at the end.​

Step 3

Shred the basil and grated lemon zest and mix very well. ​

Step 4

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to tofu veggies mixture, and with the help of a spoon smash the cheese and stir.​

Fold in drained pasta, mix well, sprinkle chopped pistachio and drizzle with remaining extra virgin olive oil.​
