Alfredo Chicken Fettuccine Open

Serves 4

1 Box Barilla® Gluten Free Fettuccine
6 Oz fresh soy chicken strips ​
3 Tbs EVOO
½ Onion, diced ​
1 Garlic clove, minced ​
8 Oz mixed mushrooms, sliced
2 Cups, baby spinach ​
3 Tbs margarine ​
8 Oz vegan cream ​
1 Tbs Nutritional Yeast​
TIP Nutmeg to taste ​
TIP Salt, black pepper, to taste​

Step 1

In a skillet over medium / high heat add 1 tbs , soy chicken,  salt and pepper.  Cook for 3-4 minutes or until browned and fully cooked, remove from the pan and set aside. ​

Step 2

Add remaining oil to the same skillet with onion. Sauté for 1-2 minutes then add garlic. ​

Step 3

Add mushrooms and sauté for 10 minutes, season with salt and pepper. Add vegan cream, nutmeg, salt and black pepper to taste, spinach and soy chicken to the skillet and toss together for 3 minutes. ​

Step 4

Meanwhile, cook pasta according to package directions and drain.  Add pasta to the sauce and fold, , add margarine and nutritional yeast and toss together for 1 minutes on low flame. If needed, add a ladle of cooking water. ​

Step 5

Serve in a bowl topping with a generous spoon of Alfredo sauce. ​
