Ingredients

Serves 4

1 Box Barilla® Rotini
3 Tbs E.V.O.O​
20 Oz mixed mushrooms​
1 Tbs fresh parsley, chopped​
½ Cup dry white wine​
½ Cup vegan heavy cream​
1 Clove garlic​
TIP Salt and pepper to taste

Method

Step 1

Scrub and slice the mushrooms.​

Step 2

Sauté the whole garlic clove in the oil.​

Add the mushrooms and cook for about 5 minutes, making sure that the mushrooms remain firm.​

Step 4

Add the white wine,  season with salt and pepper and stir with the vegetal cream..​

Step 5

Cook pasta until al dente according to the package directions and drain.​ Transfer to the pan with the mushrooms and mix well over medium heat for a few minutes.​ Sprinkle with chopped Parsley before serving.
