1 Box Barilla® Penne
4 Tbs E.V.O.O , divided​
2 Medium size zucchini , 1/2 inch diced​
2 Pints multicolor cherry tomatoes​
3 Slices of lemon, ½ cm thick​
8 Oz lactose free feta cheese, whole​
¼ Cup pistachio, roughly chopped​
1 Tbs fresh oregano, roughly chopped​
15 Leaves of basil, torn ​
TIP Salt, Pepper to taste ​

Method

Step 1

Preheat oven to 200° C and bring a pot of salted water to boil.​

Step 2

Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half E.V.O, place lactose free feta right in the center. Bake in the oven for 20 minutes.​

Step 3

Meanwhile cook pasta according to package directions. One minute before pasta is fully cooked add half cup of cooking liquid to feta veggies mixture, and with the help of a spoon smash the cheese and stir.​

Fold in drained pasta, mix well, add basil and drizzle with remaining extra virgin olive oil.​
