For the Pesto sauce
4 | Cups basil leaves |
2.5 | Tbs pine nuts |
4 | Tbs Kosher Parmigiano cheese, grated |
2.5 | Tbs Kosher Romano cheese, grated |
1 | Clove of garlic |
3 | Tbs EVOO |
For the béchamel
2 | 1/5 cup Kosher milk |
2 | Tbs Kosher butter |
3 | Tbs all-purpose flour |

Method
Step 1
Blend the pine nuts and garlic in a blender. Add the basil leaves (washed and dried) and EVO without turning off the blender. Add half of the grated Kosher Parmigiano cheese (25 g) and Kosher hard sheep cheese and adjust the density by adding more oil if necessary.

Step 2
Peel and cut the potatoes into cubes, clean the green beans and cut them into pieces also. Boil the potatoes and green beans in boiling water to al dente and drain.

Melt the butter in a pan on a medium heat. Add the flour and whisk constantly in order to avoid lumps. Pour in the milk, previously heated,. Bring to a boil for a few minutes and adjust salt.

Bake for 20-25 minutes at 325° F.
