Ingredients

Serves 8

1 box Barilla® Spaghetti
5 Egg yolks
1 Eggplant (one medium size)
¼ cup Extra Virgin Olive Oil
1 tsp Sumac
to taste salt and black pepper

Method

Step 1

In a bowl, beat egg yolks, whisk in salt and pepper and set aside.

Step 2

Cook pasta according to package directions, and drain. Reserve a little bit of cooking water.

Step 3

Meanwhile, cut the eggplant (1/2 inch wide pieces) and deep fry in extra virgin olive oil until golden.  Pat dry, and toss with Sumac.

Step 4

Toss pasta with the egg yolks mixture and cooking water for 1 minute.

Step 5

Top with fried eggplant and serve.
