3 | Slices of lemon, ½ cm thick |
8 | Oz kosher feta cheese, whole |
¼ | Cup pistachio, roughly chopped |
1 | Tbs fresh oregano, roughly chopped |
15 | Leaves of basil, torn |

Preheat oven to 200° C and bring a pot of salted water to boil

Place zucchini, tomatoes, lemon and oregano in a baking dish, season with salt, pepper and half E.V.O, place feta right in the center. Bake in the oven for 20 minutes.
