1 Box Barilla® Gluten Free Fettuccine ​
1 Skinless Chicken breast, diced ​
4 Tbsp. EVOO ​
½ Onion, diced ​
1 g Garlic clove, minced ​
8 Oz mixed mushrooms, sliced​
2 Cups baby spinach ​
1 ½ cup heavy cream ​
1 Cup Parmigiano cheese, grated ​
1 Tbsp nutmeg ​
TIP Salt, black pepper, to taste​

Method

Step 1

Bring cream to a simmer. Whisk in nutmeg, 130 g of Parmigiano, sea salt, and black pepper. ​ Turn off heat and set aside. ​ ​

Step 2

In a skillet over medium / high heat add 1 tbsp EVOO, chicken , salt and pepper. Cook chicken for 3-4 minutes or until browned and fully cooked, remove from the pan and set aside.

Step 3

Add remaining oil to the same skillet with onion. Sauté for 1-2 minutes then add garlic. ​

Add mushrooms and sauté for 5 minutes, season with salt and pepper. Return chicken to the skillet. Return sauce to the skillet.
