Open Carbonara

Carbonara is a dish that is loved around the world.
Guanciale, Pecorino Romano cheese, eggs, salt and pepper: 5 ingredients that conquered many palates. But whether for health conditions, culture or personal choices, the recipe that so many love cannot be enjoyed by everyone.
That's why this year, to celebrate Carbonara Day, we created an alternative carbonara recipe to finally turn one of the most loved pasta dishes into a version that can accommodate a variety of dietary restrictions. Your dish, your way.
The Recipe
Together with a team of international chefs, we created a delicious, alternative carbonara recipe inspired by the original one, but Kosher, Vegan, lactose free and gluten free, so that many more people around the world can finally enjoy it.

Egg Substitution
To recreate the creaminess of the eggs we used mashed potatoes, water and saffron.

Guanciale Substitution
The crunchiness of the guanciale was made using toasted soy.

Cheese Substitution
Pecorino Romano cheese was substituted with dried celeriac.

The Squad
Led by Marco Martini, the squad consists of six renowned chefs coming from different parts of the world, with different cultures and culinary traditions.
Specialized in Kosher and Vegan cuisine, each of them brought to the table a different expertise to create the Open Carbonara recipe and turn one of the most loved pasta dishes into a version that can accommodate a variety of dietary restrictions.


Renowned Chef, Marco Martini, has guided his restaurant in Rome since 2016. Among the many dishes, carbonara has always been present in his career as a chef. He also invented the now famous "Negative of Carbonara" stuffed pasta ravioli when he was only 24 years old.


Asma Khan is one of the UK's most prominent chefs. Khan is the owner of one of London's most celebrated Indian restaurants, "Darjeeling Express". The food served in her restaurant is a homage to Asma's Mughal ancestry and the streets of Calcutta, and all of the meat is certified Halal.


Manuel Kanah is a development manager living in Italy, where he has a home restaurant. He’s co-founder of the first and most famous Jewish cuisine/kosher food blog in Italy: "Lebna".


Giulia Tomelleri is a vegetarian food creator. On her social channels she shares "totally-veg" dishes, coming up with alternative tasty recipes with no meat. Giulia thinks that reducing our consumption of meat and meat products can be a great step to a bigger change.


Victoire Gouloubi is one of Italy's best-known chefs. After opening her own restaurant, she is now on TV as the face of Gambero Rosso. She advocates for more inclusive cuisine for women and her cooking philosophy is: a culinary bridge between Africa and Italy.

We created Open Carbonara because we believe that a sign of love becomes truly meaningful when it can be experienced by as many people as possible.
