160 ml Water
150 g Pork shoulder, minced
150 g Ground beef
40 g Carrot, peeled and minced
40 g Celery, minced
40 g Yellow onion, peeled and minced
100 ml Extra virgin olive oil (EVOO)
150 g Cured pork fat (lard), minced
90 g Tomato purée
100 ml Red wine
50 g Parmigiano cheese, grated
2 Fresh bay leaves coarsely chopped
To taste Salt and black pepper

Method
