Tip
Try seitan as an alternative to vegan pancetta
Method
Step 1
Here are 4 easy steps for a vegan Penne alla vodka recipe:
Step 2
Start with preparing the “soffritto” or “mirepoix”: slice the onion and chop finely. In a pan, heat up some E.V.O.O and cook until it is translucent in colour.
- E.V.O.O. (Extra Virgin Olive Oil)
- Baby onion
Step 3
Add the vegan pancetta (or seitan) to the pan, cooking until golden and caramelised. Stir regularly to avoid burning in the pan. As soon as it is golden in colour, add the vodka over a high heat and let it evaporate and cook out the alcohol.
- Seitan
- Vodka
Step 4
Pour in the Arrabbiata sauce and reduce the sauce over a low heat, adjust salt to taste. Mix in the lactose-free cream and stir until the sauce has a creamy and soft texture.
- Arrabbiata sauce
- Salt
- Lactose-free cream
Step 5
Bring a large pot of water to a boil, add rock salt and cook pasta according to package directions. Drain when “al dente”, reserving some pasta water. Mix the pasta into the pan with the sauce, adding some extra pasta water if needed. Sprinkle sliced chilli over the top and serve immediately.
- Pasta
- Salt
- Black pepper
