Ingredients

Serves 4

320 g Barilla® Gluten-free Penne Rigate
300 g Tomato pulp
200 g Vegan smoked pancetta, diced into cubes
250 g Eggplant, diced
120 ml Plant-based cream
100 ml Alcohol-free vodka or gin
15 ml Soy sauce, or tamari sauce
1 Small brown onion
1 Chilli
To taste Extra Virgin Olive Oil
To taste Salt and pepper

Method

Step 1

Here are the four easy steps for pasta with eggplant and alcohol-free vodka:

Dice the eggplant into 1cm pieces and fry in the pan with a little olive oil, until it is golden in colour. This should take about 10 minutes. Once golden, set aside.

Step 3

Prepare the "soffritto": slice the onion and chop finely. In a pan, heat up some olive oil and cook the onion until it is translucent. When it turns a golden colour, add the vodka over high heat and cook out until evaporated.

Step 4

Pour in the tomato pulp and reduce the sauce over a low heat, adjust salt to taste. Mix in the cream and stir until the sauce has a creamy and soft texture.

Step 5

Bring a large pot of water to a boil, add rock salt and cook pasta according to package directions. Drain when “al dente”, reserving some pasta water. Fry the eggplant with the soy sauce, then right before serving fold into the pan with the sauce and pasta, adding some reserved pasta water if needed. Sprinkle sliced chilli over the top and serve immediately.
