Ingredients

Serves 4

320g Barilla® Gluten free Spaghetti
4 Medium-sized Potatoes
300 g Celeriac
100 g Crispy soybean flakes
To taste Saffron
1 tablespoon Extra Virgin Olive Oil
To taste Salt
To taste Black pepper

Method

Step 1

Here are six easy steps to cook a delicious and alternative carbonara pasta:

Peel the potatoes and cook them in lightly salted boiling water. Once cooked, mash with a potato ricer and set cooking water aside.

Roast the celeriac at 120°C for 20 minutes, until dried out and toasted.

Add the saffron to a container with 100 ml of water and whisk. Pour into the bowl containing the potatoes, add a little of the pasta water and freshly cracked pepper, then blend together in a food processor until the mixture is smooth and homogenous, adjusting with additional water if needed.

Step 5

Toast the crispy soybean flakes in a nonstick pan with a spoon of olive oil on medium heat for 5 minutes, until golden. In the meantime, blend the celeriac cubes in a food processor until crumbled.

Step 6

Cook the pasta in boiling salted water until it’s perfectly “al dente”. Drain it, pour it into the pan together with the saffron and potato mixture and stir gently.

Step 7

Plate the pasta on a dish, pour over the crispy soybeans flakes, the celeriac crumbs and grated pepper to taste.
