320 g | Barilla® Gluten-free Penne Rigate |
400 g | Barilla Arrabbiata sauce |
200 g | Smoked pancetta, diced into cubes |
80 ml | Cream |
1/2 glass | Vodka |
1 | Small brown onion |
1 | Chilli |
To taste | Parmigiano Reggiano |
To taste | Extra Virgin Olive Oil |
To taste | Salt and pepper |

Start with preparing the “soffritto” or “mirepoix”: slice the onion and chop finely. In a pan, heat up some E.V.O.O and cook until it is translucent in colour.

Add the pancetta to the pan, cooking until golden and caramelised. Stir regularly to avoid the pancetta burning in the pan. As soon as it is golden in colour, add the vodka over a high heat and let it evaporate and cook out the alcohol.

Pour in the Arrabbiata sauce and reduce the sauce over a low heat, adjust salt to taste. Mix in the cream and stir until the sauce has a creamy and soft texture.

Bring a large pot of water to a boil, add rock salt and cook pasta according to package directions. Drain when “al dente”, reserving some pasta water. Mix the pasta into the pan with the sauce, adding some extra pasta water if needed. Sprinkle sliced chilli and grated Parmigiano over the top and serve immediately.
